Got a hankering for a grilled cheese sandwich, maybe with a little something extra in it, like tomato and basil?
That's just the most basic grilled cheese sandwich at Cheeseboy, a chain that has opened one of the several restaurant counters in the rebuilt Darien North rest stop on Interstate 95 northbound (actually eastbound) lanes between Exits 12 and 13.
Still not yet open at the rest stop since it went back into service in early June:
-- Pinkberry (a frozen yogurt place that has elaborate toppings you pick out yourself)
-- Wilson's Barbecue and Chicken.
Sbarro's is also open at the rest stop. Other offerings at the rest stop aren't different from what you can already find downtown or just beyond Darien along Route 1 -- McDonald's, Dunkin Donuts and Subway.
Meanwhile, the southbound rest stop looks close to opening, but it's still closed to the public.
There were at least 40 cars parked there on Tuesday, together with more than a dozen trucks, with signs being installed and other work done that looked like finishing touches.
