Convent's Spotless Health Inspection Report; Others Close

"We answer to a higher authority," the old Hebrew National advertisements would say. The Sisters at St. Brigitta, of course, could say the same thing.

The following list shows what scores local food-serving establishments received under the state scoring system ("state rating," in which 1-4 points are deducted for each violation, with 100 being a perfect score) from Darien Health Department inspectors, the rating under the Darien system ("Darien rating," in which a "Good," "Fair," or "Poor" is given to restaurants that pass inspections) and the inspection date and comments by the inspectors as noted in inspection reports.

Restaurants and other food-serving establishments that fail inspections must correct them by the next inspection. If the Health Department deems a restaurant's condition dangerous to the public, the restaurant will be closed until corrections are made, according to David Knauf, director of the town Health Department.

These reports were recently released by the Darien Health Department (the inspections are listed in chronological order by date, except for the Convent of St. Brigitta's):

Inspector's remarks: "Bare-hand contact of ready-to-eat foods. Worker using bare hands to prepare ready-to-eat salad; interior of soda gun dispenser not clean -- residue buildup; in-use knife stored between equipment and cutting board; single-use articles not inverted, properly stored; spillage of grease on floor behind fryers."

  • Mama Carmella's, 1981 Post Rd. -- Aug. 20
State rating: 92
Darien rating:  Good
Inspector's remarks: "Food not covered properly -- bacon, bread crumbs; wiping cloths not kept in sanitizer between uses; no paper towels available at hand sink -- deli section; knife not properly stored -- deli section; single-service articles not inverted; no cove base at floor/wall junctiure"

  • The Waters Edge at Giovanni's, 2748 Post Rd. -- Aug. 21
State rating: 95
Darien rating:  Good
Inspector's remarks: "Soiled wiping cloths not properly stored; in-use wiping clothes not stored in sanitizer between use; interior lower shelf of reach-in refrigerators -- food spillage buildup; gaskets on reach-in refrigerator and under-counter refrigerator in disrepair; gaskets on under-counter refrigerator not clean -- food residue buildup; no hot processes or food preparation at time of inspection. Downtime between lunch and dinner."
