Certified Home Chef Paula Nusslein launches a new Cooking Essentials series of classes - designed to help the home chef cook without the cookbook - at the Darien Community Association beginning Tuesday, September 17th.
Cooking Essentials classes are designed to help the home chef cook with confidence and breathe new life into their everyday cooking. Class format includes lecture, demonstrations, and tastings. Students learn the how and why behind cooking methods and techniques, as well as how to buy, store, prepare, and serve food. All topics and recipes demonstrated in class will be provided in a handout for use at home. Though designed as a series that builds on previously taught skills, classes may be taken as one-off sessions.
The first class of this series of 10 is offered on Tuesday, September 17th: “Stocks I – White Stocks for Quick ’n Easy Soups, Pan Sauce, and Rice." Attendees will learn to make two white stocks – chicken and vegetable, see how they can be used as a base for soups, quick pan sauces, and rice, and sample the resulting dishes.
Class runs from 9:30am to 11:30am, and is $70, or $55 for DCA members.
Instructor Paula Nusslein obtained her professional training through various cooking schools on the west coast, and completing one year of professional training and an internship to become a cooking instructor, thereafter working as an instructor for “HomeChef,” a San Francisco-based cooking school and kitchen store designed exclusively for the home chef. A 14-year Darien resident, Paula now brings her version of Cooking Essentials to us.

Class size will be kept to 18 to ensure plenty of room and time for questions; a minimum of 10 students is required to run a class. Registration deadline is September 12th.
