Waffles With Homemade Lemon Sauce

Fresh belgian waffles with a warm homemade lemon sauce are the perfect splurge to make any morning, day, evening or weekend.  I created this recipe for my children and they absolutely love these waffles and can no longer eat store bought waffles. Theses waffles are crispy on the outside and very soft and chewy on the inside and completely addicting. You can find me almost every early Sunday morning making these for my family with my hot waffle iron. What makes it really special is the warm lemon sauce, orange zest, granola and fresh whipped cream.

Waffles With Homemade Lemon Sauce:

Waffle Ingredients:
2 cups of all-purpose flour
3/4 cup of sugar
3 1/2 teaspoons baking powder
2 eggs, separated
1 1/2 cups milk
1 cup melted butter
1 1/2 teaspoons vanilla extract
pinch of cinnamon
sliced fresh bananas, oranges or strawberries
your favorite granola for garnish
pinch of orange zest
 
Lemon Sauce Ingredients:
3/4 cup of sugar
2 tablespoons of cornstarch
3 tablespoons of lemon juice
2 egg yolks
3/4 cup of water
1 teaspoon of lemon extract


Fresh Whipped Cream:
1 cup heavy cream
1 teaspoon sugar
1/2 teaspoon vanilla

Waffle Directions:
In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter.Bake in a preheated waffle iron according to manufacturer’s directions until golden brown. Pour Lemon Sauce over hot waffles and serve with cut up bananas, sliced oranges and syrup. Sprinkle granola over waffles and add a spoonful of fresh whipped cream and orange zest.

Directions for Warm Lemon Sauce:
Combine the sugar and cornstarch in a saucepan. Add in lemon juice and stir. Then add remaining ingredients, stir well and cook over medium heat until thickened, stirring often. When finished, set aside.

Whipped Cream:
Make sure cream is cold – it will make it easier to whip. Pour the cream into the bowl. Begin to whip on medium speed with your electric mixer until it becomes fluffy. Gently stir in the sugar and vanilla, adjust the sweetness to taste, and keep mixing until the cream has formed soft peaks.
